Banana Pancakes

Brunch has to be one one of my favourite meals of the day, is a Sunday really a Sunday if you haven't had brunch?! Pancakes are a classic, so here is a very simple recipe to make some extremely scrumptious pancakes, perfect for a Sunday morning!

 

Ingredients 

For the pancakes:

  • 2 ripe bananas

  • 2 eggs 

  • 350 g self raising flour 

  • 250 ml milk 

  • 1 tsp baking powder 

  • 1 tsp cinnamon (optional)


Toppings:

  • Blueberries

  • Raspberries

  • Strawberries

  • Greek yogurt 

  • Honey 

 

Method 

Firstly, mash the ripe bananas in a small bowl until they are relatively smooth. Don't worry if there are a few lumps. Whisk together the 2 eggs and milk and mix with the mashed bananas.

In a separate mixing bowl, sieve the flour and baking powder and make a well. Slowly pour the milk, egg and banana mixture into the well, whisking continuously until it is all combined and smooth.

Heat a small amount of butter in a non-stick frying pan over a medium heat. Spoon 2 to 3 tablespoons of the batter into the frying pan and fry for a few minutes until bubbles start to form on the surface. flip the pancake and fry on the other side for a few more minutes.

Stack the pancakes and scatter on the fruit, drizzle over honey and serve with Greek yogurt...and enjoy!
